Awesome quilt to do! As for the flying geese border, I would suggest you go to quilterscache.com - look in the how to section - there are several ways to make the f.g. without any waste. I have used several other ways, including some of the instructions on this site, but seem to gravitate back to those instructions. It is all in what you become comfortable with.
