My group made self binding blankets, no batting. They are perfect for hot weather climates. We used one piece for the front and one piece for the backing. We made them all sizes from newborn to twin. We sewed X down the middle for the bigger quilts. I don't have the instructions to to put as a download right now. But found this free tutorial.

Some on Etsy are selling the instructions but they have been free for years online and made for decades as receiving blankets.
