I have butcher block backsplash on all the walls from counter to cabinets. It ages and looks great even if it's old. I have changed the counter top twice and the backsplash matched every color I tried out. So buy the biggest bamboo or wood cutting board you can find and mount that behind your stove. It will add charm as well as working great.
