I have made a chenille baby blanket and it was quite easy to make. The cutting is a little boring and can make your hands sore from scissors if you don't have the chenille cutter. Basically you stack 3-4 fabrics on top of each other, sew 1/2 inch channels on the bias and then cut between the stitching lines. Flannel frays really well for this technique but some have posted chenille done with pre-printed panels that are adorable. HOWEVER you may be asking about making a quilt out of ready made chenille fabric? That could be very pretty with a variety of different patterned chenille squares. I would use larger pieces and bigger seams due to the more open weave.
