Yep, that's how I do mine too. I try to keep one of the fabrics in the blocks the same so I can use it for the borders. Yes, I really have made string quilts. I made a bunch back in the day to donate to ABC Quilts (that's how long ago it was... before they merged with Project Linus) & a local nursing home. It just was back before I "knew" to take picture of my quilts.
