Other than planning for the size of the border(s), I don't think about that too much till the end. Once the center is finished is the time to plan the border, so it fits more with the quilt. Sometimes a simple plain border, sometimes I piece the border, sometimes it prairie points, applique, whatever strikes me as 'right' when I look at the quilt. I've always done it this way, it works for me.
