I make my binding using two different colors. The first color would be black and I cut it 1 1/2". Then I find then use the red you were talking about and cut it 2". I sew the two pieces together side by side (after I have attached all the binding end to end) and iron in half. You will have 1/4" of the red sticking out. So, you lay the 1 1/2" black fabric against the back of the quilt so that the red is facing you. Then you turn it over your quilt ends and you will see the 1 1/2" black fabric with the 2" red sticking out 1/4". Then I machine sew it between the colors. It leaves a nice lip on it. My LQS owner taught me this way and I love it. That's one easy way to do the binding like you want it done. If you want more details, pm me.
