I would just jump in with both feet and get things done one at a time. I am not in a small area, but I, too decided to get my ufo's done. I have 2 ready to quilt. One was kind of large and I had trouble sorting out the blocks. I tried to do it on a bed, but the bed was too small. I had to pick up something at the LQS and I mentioned the trouble I was having. The owner offered to let me use the classroom at the shop when there wasn't a class using it. Maybe something like that can help you. Another thing that is a possible help is a local library. Sometimes they let you use a conference room to lay out your project. Hope you can find a solution to your "space" problem. Good luck. The only other thing I can think of is to get a can of bug spray that covers a large area and work outside. What are you doing in the middle of nowhere? Just curious.
