This sounds "weird", but it's really good.

Make-Ahead Scrambled Eggs for a Crowd

Eggs
Add-ins: Red peppers, Onions, Ham, etc.
1 T 7up per every 2 eggs

Just scramble it all together, put them in an oven-safe dish, and put them in the oven on "warm" until ready to serve.
The 7Up keeps the eggs from getting hard; but more importantly, it keeps them staying yellow instead of turning green when making a lot.

ALSO

Sausage Egg Bake

2 Packages Regular Jimmy Dean Sausage (or spicy, if you like that)
2 Cups Grated Cheddar Cheese
1 Can Mushrooms
3 Cups Seasoned Croutons
6 Eggs, Beaten
2½ Cups Milk
1 Can Cream of Mushroom Soup

1. Butter a 9 x 13 glass dish and pour croutons in the bottom.
2. Brown sausage and place on top of croutons.
3. Mix milk, eggs and cheese. Pour over top. Mix ¼ cup milk with cream of mushroom soup and mushrooms and pour on top.
4. Refridgerate overnight before baking.
5. Bake at 350 degrees for 45 – 60 minutes.
A GREAT make-ahead dish!
