Just saw your post and I wanted to mention the large quilt guild i belong to does a LOT of charity quilts. We do for oncology and veterns in the one group and they use fleece for backing. they don't seem to do a lot of fancy quilting on them ( let me say those that can do and those that can't just do like a grid) I personally do not do any of the quilting - I am more of a piecing the blocks together kinda girl right now. But i wanted to let you know it does work. of course these are lap sized quilts so they aren't really full size quilts.
