It is amazing. Great job. For quilting I would go:

Moving from left to right on each row, over the first brick, straight down, under the second, straight up, over the thrid, down, under the fourth, up, until you get to the end. This will minimize stopping and re-starting too many times, and going over areas alerady stitched. Most battings only need to be quilted at least every 10 inches, and that will cover it.

Whatever you decide to do, it will be wonderful.
