Yep, this is the same method I use. Just finished 5 of them and have 8 more to go. They are easy and look so professional when finished especially if I do a french hem for the side and bottom. For the kids I used kid themed prints for the body and stripes for the cuff. For the adults, I used white fabric for the body and then themed fabric for the cuff ... mostly sports team fabrics. Often I don't even bother with the piping trim unless I already have something I can use.
