This recipe is easy and I had an Italian friend who loved it.
Italian Sausage Tomato Sauce
Slowly brown 1 lb. sweet italian sausage. Remove from pan and remove skin. Cut in bite sized pieces. Discard fat from pan. Add 1/4 cup olive oil to pan and saute 1 chopped onion & 1 minced clove of garlic. In another pan combine 1 can (2 cups)tomatoes, 1 can (2/3 cup) tomato paste, 1- 8 oz, can tomato sauce, salt and pepper, 1 bay leaf and dash of sugar, alllspice, and oregano. Add about 2/3 cup water. Add a little at a time so sauce doesn't get too thin. Add sausage and onion to sauce and cook 1-2 hours, covered. I make a salad and use bottled creamy italian dressing. Slice a loaf of Italian bread. Butter each slice and gently add oregano and garlic powder. Place in broiler until brown.
