After I fold my binding over and iron it, I sew it 1/8" together on the unfinished side to keep it from pushing apart when I'm sewing it onto my quilt. It really helps. It lays flat and no more surprises.
I used to stitch everything, until I found about about the Elmer's School Glue method. The glue holds the layers together, as well as holding them to the quilt. Sooooooo much easier, IMO.
