Zucchini Cookies
I thought I would share this recipe since Zucchini season is here.
1 cup grated zucchini...1 cup sugar...1/2 cup shortening...1 egg (mixed together)
2 cups all-p flour...1/2 tsp. baking soda...1/4tsp. salt...1tsp cinnamon.(sifted together)
Combine the dry ingredients into the wet ingredients and add 1cup raisins or 1cup nuts if desired. Drop by spoon onto a greased cookie sheet and bake at 375* for 12 to 15 minutes. This should make 3 dozen cookies but it depends on if you add nuts or raisins and how big of a spoon you use.
