Eggs are always a default food for me, year round!
... which makes me think of another favourite ...

Apple Omelette ... I'm sure this seems odd to everyone!!! I
t was one of those things that I just "had" to try after hearing a friend rave about it. I figured it was either going to be really good .... or horrible. Thankfully it was terrific and has become my go-to for a lazy meal, yet substantial and filling. The apples give a nice sweet twist to it. Here's how I do it ........... Slice apples thin, sprinkle with cinnamon and saute in a fry pan.
I usually use Granny Smiths or a harder apple that won't get too mushy when cooked.
I spray the fry pan with vegetable spray, add just a little water to the slices.
Stir while cooking and let the water cook off.
Meanwhile, beat your egg(s) with salt and pepper.
Once the apples are getting warmed thru, not soft, pour the beaten egg(s) over.
Cook as you would an omelette.
At the end, top with shredded cheese (your choice of kind, but my two favourites are fresh grated parmesan or cheddar).
Let melt. I usually put the lid on to help the melting happen faster.
Sprinkle with a little more cinnamon and serve!

The first time I only made it with one egg, as I didn't really trust it could be good. I quickly made another egg for the rest of my supper that night. I was sold on it. So I hope you like it too .. it's worth the try!
