My mom has been making this cookie since we were kids and now I make them as part of my Christmas cookie trays:

Hedgehogs

2c shelled walnuts 1 c brown sugar, firmly packed
1 c pitted dates 2 eggs, slightly beaten
2 c shredded moist coconut

Put nuts and dates through a food chopper, using coarse blade. (I buy chopped dates and just chop the walnuts coarsely). Mix with 1 1/2 c coconut, sugar and eggs. Set oven for moderate, 350 degrees. Shape mixture into rolls about 3/4-inch thick and 2" long. Roll in the remaining 1/2 c coconut. Place on a greased baking sheet and bake 10-12 minutes, until light brown. Makes 3 dozen,.

Note: I measure out the coconut for the cookie dough but I find that it takes more than what they say to roll them in, so I just put some in a flat bowl or dish at a time and add more when it runs out. Everyone loves them when I make them. If you make them, let me know how you like them.
