I usually make these at Christmas, my family loves them. Also, did you know you can freeze the dates. I keep them in the freezer for several years, just take out what I need and pop them back into the freezer.

Crispy Date Bars

Amount Measure Ingredient -- Preparation Method

BASE
1 cup flour
1/2 cup brown sugar
1/2 cup butter or margarine, softened
FILLING
1 cup dates, chopped
1/2 cup sugar
1/2 cup butter or margarine
1 ea egg, well beaten
2 cups crispy rice cereal
1 cup nuts, chopped
1 tsp vanilla
FROSTING
2 cups powdered sugar
1/2 tsp vanilla
3 oz cream cheese, softened

1. Preheat oven to 375ºF. Combine Base ingredients and mix until crumbly.
Press into ungreased 11x7 or 9" square pan. Bake at 375º oven for 10 to 12
minutes or until golden brown.

2. In medium saucepan, combine dates, sugar and butter/margarine. Cook over
medium heat to boiling, stirring constantly; simmer 3 minutes. Blend about
1/4 cut hot mixture into beaten egg; return to saucepan. Cook until mixture
bubbles, stirring constantly. Remove from heat; stir in cereal, nuts and
vanilla. Spread over baked base; cool.

3. In small bowl, combine Frosting ingredients; beat at low speed until
smooth. Spread over filling. Cut into bars.
