i have to try this! A local farmer bring us in huge bags of corn every year. Last year some of my co workers didn't take any and it went bad. I had to bring it home and get rid of it so he wouldn't see it in our trash. I wonder can it be freezed (once i take the corn off the cob)? Here is an easy recipe for freezer corn, and you don't have to blanch it on the cob beforehand.
Frozen Sweet corn
10 cups raw corn, cut off the cob
1 1/2 cups water
1/4 lb butter (8 tbsp)
1 tsp. sugar
1 tsp. salt
Combine all ingredients in saucepan; bring to a boil and boil for 3 minutes.
Cool. Pour into freezer containers or freezer bags and freeze.
