Welcome to the board! Do you know that you can cut the edges yourself??? Very easy to do after you get all your squares sewn together. Just snip them with scissors (or you can buy Rag Snips which are made especially for making rag quilts. They have a spring that helps open and shut the blades, which is a relief to your hands after all the cutting you will have to do!!!) Here is a video tutorial on how to make a rag quilt.
