I know Kaye England has a Civil War sampler quilt on Craftsy. You might not want to do all of the blocks, but the class comes with the instructions for all of the blocks and she shows you how to easily construct them all. I have put mine together and it was easy. I really enjoyed the class, and if you can find it when they are having their $20 sale it's completely worth it. I purchased mine when it was $40 and will do it again.

You could choose the blocks you wanted to do and make your own quilt if you wanted, although see has each block and the history behind it, which your son might find interesting.

The quilt she has might be too busy for your son, but you could make any type of quilt out of any of the numerous blocks she shows you.
