Default Caramelized onions . . . in the crockpot!

I love caramelized onions but just don't have the patience to cook them on the stove for that long. I get impatient and turn the heat up too high. It occurred to me yesterday that maybe they could be cooked slowly in the crockpot. So I Googled it, and YES YOU CAN! I used my large crockpot and only about 1 1/2 onion. The recipes if you Google say to fill the crockpot (4-5 lbs of onions) with some butter or olive oil and cook on high for an hour or so, then turn down and contine cooking for 10-12 hours. Makes about 5 cups and stores in the refrigerator for a long time. I'm going to get a bag of onions at Costco and try a pot full. My 1 1/2 onions turned out wonderfully. I put them on some swiss dip sandwiches (grilled hamburger with swiss cheese, grilled ciabatta rolls, carmamelized onions, ah jus). They were SO good!

Other ideas for using caramelized onions:
Pizza ~ Caramelized onions, walnuts, feta or goat cheese
Soups ~ French onion; mushroom . . .
Topping for mac & cheese (or as DD's boyfriend it - kase spaetzle)
