I would leave the quilting alone, looks fabulous.
As far as removing the paper, I always have to use tweezers for some of it. Your stitch length is probably fine. If you work a lot with paper, you'll learn tricks to removing it. You can try to gently pull along the stitch line, crease the paper on the stitch line, or spray it with a little water first.
