You will lose stiffnes mostly. If you like a bag a little floppy, then that would be fine. But I would make sure I put the interfacing on the outside of the bag for wear and tear reasons. And make sure your lining is sturdy. You could put a thin fusible on the lining and that should be good.

Remember, patterns are like a chilli recipe, it is merely a guideline.
