I am thinking of the old quilts I have seen with either the shell pink or sage green sashings. Ot I have seen them both together too on the old butterfly quilts. Southern women typically used light pastel solids to set thier quilts at that time. But there is the solid white or beige fabric.
I would suggest to lay out your blocks onto an open piece of fabric. That audition might help you decide.
