I can't imagine cooking for 40 people! I would do a large ham, a couple of pans of cheesy hashbrowns, a hot vegetable dish and serve with small rolls for those who want to make sandwiches. Add pickles and carrot and celery sticks. Dessert would be whatever my guests want to bring. Maybe a couple of jellos with fruit in them.
