Becky, I'm with you! I buy the chopping mats 2/$1 at the dollar store, too, and they are perfect for template use. I also find the mats useful for the bottoms of wire storage drawers to keep small items from falling through. Funny thing, I don't think I've ever used those mats for chopping, although they work well for measuring dry baking ingredients onto, then using as a "funnel" to add to the mixer! LOL
