QNS---I hope that I can be like you when I "grow up". That menu sounds great!

My sisters and I will do most of the cooking..Mom never really enjoyed it much so she is happy to turn over her kitchen to us. We will be having much of the same, the only addition I can add is a carrot casserole...very yummy. It is funny I had asked Mom Tuesday if she wanted me to bring it and she said no she thought there would be enough. Then Wednesday when she and my sister were at the store, my sister called and said "are you bringing that carrot casserole?" LOL I gave her the recipe and she is going to bring it instead.

In case anyone wants to try it, here is the recipe:
1 med chopped onion
3T. Butter
4c. cooked carrots
1 can cream of celery
1 can milk
1/2t. salt
2 cups shredded cheddar cheese
1/2c. butter melted
3c. stuffing mix (fine, more like bread crumbs)

Brown onion in 3T butter. Set aside 1/4c. cheese. Combine the onion, carrots, soup, milk, salt and cheese. In separate bowl mix melted butter and stuffing. Then stir all together put in 2 1/2qt casserole, top with cheese.

Bake at 350...30min covered, 15 min uncovered.
