These cookies sound yummy! I found canned pumpkin in the larger cans at Save A Lot and bought quite a few. I am diabetic and use the pumpkin in alot of my recipes and cut back on the oil. I agree that unfortunately things are not going to get any cheaper but I buy it when I see it on sale. My husband sometimes thinks I am crazy to do this but it saves us money when things are tight.
