the reason for the quilting distance recommendations with batting is due to the fibers separating and pulling apart when the quilt is laundered- using fleece (or flannel) with no batting means you can quilt any amount you want- or as little as you want- the fiber is not going to pull apart- separate. the amount can be a total personal choice and will be fine- should be (balanced) to look right- beyond that- do as you please.
