QNSue ... just remembered another one ... Egg Muffins!
Basically it's omelette ingredients and then you bake it in muffin tins. Eat it right away or store in the frig or freezer and zap in the microwave when ready to eat. And bonus, you can eat it by hand ... so a good grab and go food.
For cakes ... there's always Angel Food Cake ... then a Sunshine Cake where you use the egg yolks.
