How be we post some of our egg recipes?
After all, I'm sure we'd all like to get some new ideas ... and not just QNSue!

Here's a favourite of mine. It's like an omelette or quiche as far as ingredients, only that you bake in muffin cups. Because of that, it's easily eaten by hand. I like to keep a stash in the freezer for quick meals (great while quilting!!), snacks or as a grab and go food.

Egg Muffins
~~~~~~~

Beat together
12 eggs
1/2 cup milk
salt and pepper, to taste

Saute together as few or as many as you want/ have.
----onions, peppers, mushrooms, broccoli, cherry tomatoes, Canadian Bacon, celery, ham, etc. (basically anything that you'd add to an omelette)
Then add to egg mixture and mix well.

Add and mix
1/2 cup shredded cheddar (more or less, or optional)

Spray 12 cup muffin pan with no stick spray. (I use the Pampered Chef Stone for muffins.)
Fill with egg mixture. (I fill the muffin cups.)
Bake at about 350°-375°F for about 30 minutes.

The "muffins will "puff" up like a muffin and may settle some as they cool.
(They develop a bit of an outside skin or crust, to make them hand-eatable!!)

**Eat straight from the oven, or keep in frig or freezer and zap in micro.
**Depending on how many of the add-ins you have you may get more than the twelve muffins or you could pour the extra into a skillet and lunch is ready while the muffins bake.
**Can be made as appetizer-like mini muffins!!
