I usually have quilts planned out 2-3 in advance, buying fabrics a little here, a little there, so that when I am ready to start one, I have everything I need. But I also usually have several projects in process at the same time. That way if I am not in the mood to work on one particular project (usually because I am having issues), I can work on something different. Right now I am in process on one quilt, gathering fabrics for the next two, and a bag to get started on later today. I just really hate not having more than one item in the works
