I say yes, full steam ahead on the sheet issue, I too use them successfully all the time.
I say wow what an awesome job on your quilt! Isn't it fun to do something without a pattern and just wing it? And just to add, I really like that you used two different whites in your quilt center. I think the little bit of difference adds a special note of interest.
