The pattern you chose will use 1/4" pieces. Both of these fabrics have both color and value changes larger than 1/4".
I double-checked with the pattern, and the smallest cut is 3" x 1.25". I think that's still a little too small for #11, but it might not be a disaster if I can't find a replacement.
