How about using your scraps for a small quilt; table runner; something not too big. I am assuming you don't have a lot of them but if you do, what about a scrap quilt. If you search (goggle) the web, there are a ton of free patterns for scrappy quilts. Also, depending on how much have, maybe you could make them into a design for the center of a larger quilt.
