My shorter grandmother was 5'0" - 5'1". She had her kitchen counter installed at 30" instead of the normal 34". My taller grandmother was 5"11", and had her kitchen counter installed at 36". Assuming that standing and cutting food at a kitchen counter is similar to cutting fabric, the right height for you might be 29", which is normal dining room table height. Another alternative is to sit and cut fabric. That's what I do.
