I had Create a Meal Lo Mein with chunks of chicken. It has the protein, veggies, and starch. And then for dessert I had a Buddy Bar and a glass of wine. My husband died four weeks ago and I am learning how to cook for one. "Serves two" works for one for two nights. I haven't gotten to the pot roast yet. I also found Pictsweet Tuscan vegetables heated in the microwave and that makes a perfect lunch. Lots of veggies. Love veggies! Love broccoli! Will try for something different next week.
