If you want to, you can use the blue center square as one fabric and sew triangle bits on each corner. It just won't give you the scrappy look.

There is also the method where you sew around two big squares and cut it into multiple HSTs. The problem for me with this method is that the outside of the HST is on the bias. It does make HST construction easy though. Jenny Doan has a tutorial for that on youtube.
