I have also filled the cups with lemon curd topped with a single blueberry, chocolate pudding with whipped cream on top, or seafood salad. I recently saw a photo of a strawberry and a cube of shortcake on a skewer with chocolate drizzled on top. Spinach/artichoke dip and chips would be great.
