Default Batting question...advise needed for bridal quilt

I'm marking the borders from my grandbaby's wedding quilt and am getting ready to sandwich it.

I want the quilting to really show and am in a quandry about what to do. i had blanned on using a batting of either Quilter's dream...or of Hobbs 80/20.

But now I'm reading that many use 2 layers of batting to make the quilting really pop. I'm soooo new to this and am not familiar with battings enough to make this decision.

I really want this to be a WOW moment for her, so I need advise from you.

I've seen so many pics of those quilting on this site where their quilting is beautiful and really stands out. Hoping those folks will advise me.

So, one batting or two? What to use for batting(s)?
