You could also tie from the top but don't cut the threads; run the thread between fabric layers to the next tie point, etc. I'd use a long craft needle to do this. The ties will hold the sandwich together but the knots will not detract from the beauty (and hard work) of all those hexies.
And I agree - baby and quilt are adorable.
