I never hand sew them! Usually the opening is at the bottom anyway. I just fold the edges in 1/4" and sew about 1/8" from the edge. I start my closure seam about 1/4" from the start of the opening and extend it the same past the end of the opening.
This is the way I do it also. Once you put items in the bag, they will cover the bottom anyway, so no one will ever see the seam.
