That method makes every edge a bias edge. I make square in a square blocks for the scrappy quilts I make but the triangles are cut once on the diagonal so the bias edge is sewn to the center square. They're a 5 inch square for the center and two 4 inch squares cut in half once on the diagonal for the corner triangles. The squares come out 6 3/4.
