In a piano boarder the pieces are seamed ACROSS the width of the border and they will remain as a single layer on the top no different from a pieced block. In binding, you already deal with double the thickness of fabric on a regular piece. When you sew the pieces together and press the seams open you have to deal with 4 layers and that can get bulky.

I think you are asking for more trouble than it's worth. Can you find another piece of striped fabric that you can cut in WOF?
