A piano key border has a zillion seams and people do them all the time. Just remember to stay stitch the outside edge so the seams don't pull apart when you quilt. You can also just use it as is and miter the corners!
In a piano boarder the pieces are seamed ACROSS the width of the border and they will remain as a single layer on the top no different from a pieced block. In binding, you already deal with double the thickness of fabric on a regular piece. When you sew the pieces together and press the seams open you have to deal with 4 layers and that can get bulky.
I think you are asking for more trouble than it's worth. Can you find another piece of striped fabric that you can cut in WOF?
