I didn't cook mine long enough and it came out chewy. Dh says we can fix that by cooking it some more. The juices were ***way*** too salty! For a 2-lb roast, definitely cut all of the seasonings in half. Also, don't skimp on cooking time. I have an old crock pot (they cook at lower heat than modern ones) and 7.5 hours was not enough for a 2.5lb roast -- at least, not long enough to make it tender.
