Thank you all, for the lovely comments and suggestions. I, personally, did this recipe with just the Two Items and my muffins turned out just fine for my taste. Actually, I used three items as I did add raisins. But then just a carrot cake mix and canned pureed pumpkin. I imagine you could change this up many ways and just adjust the bake time. For me, I am happy with the easy way.....
I also like the 1-2-3 mug cake. Another easy quick dessert. One third cake mix, two TBPS water....mix these in a microwave safe mug and cook on high for one minute. I usually top mine with some fruit and canned (aerosol) whipped cream. I also mix an angel food cake with another flavored cake and keep these in a ziplock for easy dipping.....LOL! My DH is NOT a cake lover, so I often do this for "just me".......another WWer recipe.......
