I actually have two recipes:

Ginger Tea Bread
Sift together: 1 1/4 cup flour, 1/4 cup sugar, 1 tsp. baking soda, 1/2 tsp. salt, 1/2 tsp. ginger, 1/2 tsp. cinnamon, 1/2 tsp. cloves

Mix together and add: 1 unbeaten egg (best at room temp not out of the fridge) 1/2 cup molasses, 1/4 cup very soft margarine.

Beat well and add 1/2 cup BOILING water.

Pour into a greased 8x8 inch pan. Bake at 350 degrees for 30-35 minutes.


This next one is old. I've been making it for at least 40 years. Be aware that it does tend to fall in the middle if you take it out of the oven too soon or sometimes even if you test it before it is done. Very rich and moist. Wonderful served warm with whipped cream.

Gingerbread

Cream 1/2 c. soft margarine, 1/2 c. sugar, 1 tsp. cinnamon 1/4 tsp. cloves, 1/ tsp. ginger.

Add 1 beaten egg and 2/3 c. molasses

Sift together 2 c. flour, 2 tsp. baking powder, 1/2 tsp. baking soda, 1/2 tsp. salt and add alternately with 3/4 c. sour or butter milk.

Stir in 3/4 c. chopped nuts (optional)

Spread in a greased 8x8 pan and bake at 350 degrees for 45-50 minutes.
