I'm making a 9" flour tortilla stuffed with leftover chicken breast, sauteed sliced red bell pepper/white onion/canned mushrooms, leftover black beans, sour cream, and homemade salsa.
Put this on a Corning ware plate, rolled and stuffed, topped with salsa and shredded cheese, then bake about 15 minutes.
Sometimes after baking I then top that with shredded lettuce, chopped tomato and more salsa.
I get so tired of thinking up stuff to cook for dinner by myself; guess that's why I eat out so often, even alone.
