For pockets: Using one "retired" towel, after the skirt portion has been cut from the towel, you could use the remainder of the towel for the bib and pockets, either on that apron or swap with another apron being made from another 'retired' towel.
The 30s apron did have a pocket made out of the same fabric that was used for bib and straps. I just didn't bother putting pockets on mine.
